Over my years of yo yo dieting, I've learned that cheat MEALS are the way to go. A cheat DAY can absolutely kill your progress, while a cheat meal can give you the flavors you're craving without derailing your diet. However, even during my cheat meals I try to find healthier recipes or versions of pizza, ice cream, fries, etc. I love Hungry Girl for her amazing recipes, tips, and tricks. The best way to follow along is to subscribe to her emails. One of the emails last week featured pizza fries and I knew I just had to make them. Cameron actually did all the work...he's so sweet, and they were delicious! I was planning on snapping a picture of them, but the tasted WAY better than they looked. This recipe is great! Only 264 calories per serving and a side salad creates a semi-balanced meal for under 500 calories. Disclaimer: eating this meal everyday does not create a summer bod, but it sure is fun to indulge every once in a while!
Prep: 10 minutes Cook: 30 minutes
Ingredients: 6 oz. russet potato (about half of a medium potato), scrubbed clean, cut into French-fry-shaped spears 1/4 cup canned crushed tomatoes 1/4 tsp. garlic powder 1/8 tsp. onion powder 1/8 tsp. Italian seasoning 1/4 cup shredded part-skim mozzarella cheese 6 pieces turkey pepperoni (optional: roughly chopped) Optional: salt; additional garlic powder, onion powder, and Italian seasoning
Directions: Preheat oven to 425 degrees. Spray a baking sheet with nonstick spray.
Lay potato spears on the sheet, and bake for 15 minutes.
Flip spears. Bake until tender on the inside and browned and crispy on the outside, 8 - 10 minutes.
Meanwhile, in a small bowl, stir seasonings into crushed tomatoes. If you like, add salt and additional seasonings.
Group fries together in the center of the baking sheet. Evenly top with sauce, cheese, and pepperoni.
Bake until sauce and pepperoni are hot and cheese has melted, about 3 minutes.
Transfer to a plate.
