Greek Pasta in 3 Simple Steps
Two weeks ago I went to Nordstrom in search of new Bobbi Brown Mascara. I'm currently alternating between 'Eye Opening' Mascara and 'Smokey Eye' Mascara, as seen here, (as I type this I'm having on of those "isn't mascara a funny word" moments - M-A-S-C-A-R-A), but I digress... it was lunch time when I went and rather than attempting to find a semi-healthy option in the food court, I made my way to Nordstrom's E-Bar for their pasta salad. While I'm not claiming a pasta salad is healthy by any means, this particular one, makes me quite reminiscent of my Nordstrom Retail Management Internship circa 2013. The following Sunday, I decided to recreate it as meal prep for the week. I have to admit, these pictures are missing one key ingredient: arugula, which I later went to the store, picked up and added in. This recipe is SO easy to make, especially since I used OPA Greek Yogurt Feta and Dill dressing, a must-have in your dressing collection. OPA!
Ingredients
1 cup of chopped chicken (I used a rotisserie chicken)
1 cup of tomatoes (I prefer cherry, but had roma in the house...)
1/2 - 3/4 Jar of OPA Greek Yogurt Feta and Dill dressing (depending on how creamy you like it)
8 oz. of ziti, penne, or bow tie pasta
8 oz. of arugula (not pictured)
salt and pepper
1) Chop.
2) Drain.
3) Mix (and chill).
